Mediterranean Chopped Chicken Salad

Sweet and spicy grilled harissa chicken, arugula and spinach, farro, golden raisins, walnuts, and a delicious herby tahini dressing. It’s the best flavor combo!

Ingredients
Salad Ingredients:
- 4 oz chicken
- 6 oz greens (spinach, arugula, or mixed)
- 1/2 cup walnuts, toasted and rough chopped
- 1/2 cup grape tomatoes, halved
- 1/3 cup golden raisins
- 4 oz. crumbled feta
- 1 tbsp each fresh cilantro and mint, chopped
- 1/2 cup farro, cooked according to package
- Pickled onions, optional
Chicken Marinade Ingredients (for 8 oz. chicken):
- 2 tbsp harissa
- 1 tbsp honey
- 1 tbsp lemon juice
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cumin
- 1/2 tsp salt, or to taste
Herby Tahini Dressing Ingredients:
- 1/3 cup tahini
- 1/3–1/2 cup water
- 2 tbsp lemon juice
- 1/4 cup fresh mint leaves
- 1/2 cup fresh cilantro
- 1 large clove garlic, minced
- 1/2 tsp salt, or to taste
Quick Picked Onions Ingredients:
- 1/2 medium red onion, sliced
- 1/4 cup vinegar (apple cider is my favorite)
- 1/4 cup water
- 2 tsp sugar
- 1 tsp salt
- 1 tsp whole coriander seeds, optional
Instructions
- Mix together harissa marinade for the chicken and toss with chicken until even coated. Let marinate for 30 minutes then cook chicken until cooked through (internal temperature reaches 165 degrees). A grill pan or cast coated with oil iron works well for this. Set aside to cool then chop into 1/2 inch cubes.
- Blend together ingredients for tahini dressing. Use 1/3 cup of water at first and then stream in more if needed to reach desired consistency of dressing. Season to taste with salt.
- For pickled red onions combine all ingredients except onions into a small pot. Bring to a gentle boil then add in sliced onions. Remove from heat. Onions should be pickled within 10-15 min. Store leftover onions in a glass jar refrigerated for 2-3 weeks.
- Assemble salad with cooked farro, greens, toasted walnuts, raisins, tomatoes, harissa chicken, herbs, pickled onions if desired, and feta. When ready to eat pour 2 oz of tahini dressing over salad and shake well in Pop Bowl!
