Ingredients

Salad Ingredients:

  • 2 Cups Mixed Greens
  • 1/2 Cup Strawberries – Rough chopped
  • 1/2 Cup Blueberries
  • 1/8 Cup Goat cheese – Crumbled
  • 1/8 Cup Candied CA Walnuts – Rough chopped
  • 1/4 Cup Pickled Red Onions
  • 1 TSP Fresh Mint Leaves – Rough chopped

Blueberry Balsamic Dressing Ingredients:

  • 2 TBSP Meyer Lemon Olive Oil (or regular olive oil with a squeeze of  Meyer lemon)
  • 1 TBSP Balsalmic Vinegar
  • 1 TBSP Blueberry juice
  • 1/2 TSP Mike’s Hot Honey Honey (or regular honey)
  • Sprinkle of Salt and Pepper

Instructions

  1. Wash and dry all produce
  2. Layer all ingredients into a bowl
  3. Whisk or blend all salad dressing ingredients together
  4. Mix salad ingredients and salad dressing until well tossed, preferably in a Pop Bowl
