This salad blends the best of both Mexican Street Corn and the traditional Cobb Salad

Ingredients

For the Salad:

  • 1 Cup Romaine
  • 1 Cup Mixed Greens
  • 1/2 Cup Cherry or Grape Tomatoes
  • 1/2 Avocado
  • 2 Pieces of Bacon – Crumbled
  • 1 Hard-Boiled Egg – quartered
  • 1/4 Cup Pickled Red Onion
  • 1/8 Cup Cotija Cheese – Crumbled
  • 1 TBS Cilantro – Chopped

For the Dressing:

  • 2 TBS Trader Joes Creamy Cilantro Dressing
  • 1 TBS Seasoned Rice Wine Vinegar

Instructions

  1. Add all ingredients to a Pop Bowl
  2. Whisk together the dressing
  3. Pour the dressing onto the salad and shake well to thoroughly combine
