Mexican Cobb Salad

This salad blends the best of both Mexican Street Corn and the traditional Cobb Salad

Ingredients
For the Salad:
- 1 Cup Romaine
- 1 Cup Mixed Greens
- 1/2 Cup Cherry or Grape Tomatoes
- 1/2 Avocado
- 2 Pieces of Bacon – Crumbled
- 1 Hard-Boiled Egg – quartered
- 1/4 Cup Pickled Red Onion
- 1/8 Cup Cotija Cheese – Crumbled
- 1 TBS Cilantro – Chopped
For the Dressing:
- 2 TBS Trader Joes Creamy Cilantro Dressing
- 1 TBS Seasoned Rice Wine Vinegar
Instructions
- Add all ingredients to a Pop Bowl
- Whisk together the dressing
- Pour the dressing onto the salad and shake well to thoroughly combine
