Easy Weeknight Go-To Garden Salad

  • 1 Cup Romaine Lettuce  – washed and torn
  • 1 Cup Mixed Greens
  • 1/4 Cup Carrots – diced
  • 1/4 Cup Cucumber – diced, sliced, or cubed
  • 1/4 Cup Cherry Tomatoes
  • 1/2 Avocado
  • 1 Cup Grilled Chicken Breast
  • 2 TBSP Gorgonzola Cheese – crumbled
  • 2 TBSP Toasted Walnuts – roughly chopped
  • 1 TBSP Olive OIl – for toasting walnuts
  • 1/2 TSP Garlic Salt  – for toasting walnuts

Dressing (makes a full bottle of dressing) use only enough for a single salad

  • Good Seasons Italian ‘Make it Fresh’ Dressing packet
  • 1/4 Cup Red Wine Vinegar
  • 3 TBSP Water
  • 1/2 Cup Olive Oil


  1. Wash and dry all produce
  2. Chop produce into bite-sized pieces.
  3. Toast Walnuts until golden brown in a pan on medium heat, with 1 TBSP olive oil and garlic salt, stirring regularly so they don’t burn.
  4. Grill chicken or use pre-cooked chicken and chop into bite-sized pieces
  5. Make the Italian dressing in a measuring cup or in a salad dressing cruet.
  6. Add all the produce into a bowl and top with chicken, gorgonzola, and toasted walnuts
  7. Pour on Italian dressing and toss well, ideally in a Pop Bowl
  8. Enjoy!
